Blood Orange Mojito

When blood oranges are in season, I gravitate towards them. I love the beautiful coloration on both the interior and exterior of the fruit. This cocktail is both delicious and refreshing and sure to be a hit at your next dinner party!

Blood Orange Mojito
Ingredients
- 2 large wedges blood orange
- 1 large wedge lime
- 1 sprig mint, plus more for garnish
- ½ teaspoon demerara sugar
- 1 ½ ounces simple syrup
- 2 ounces light Caribbean rum
- Club soda
Instructions
- Muddle the blood orange, lime, mint and demerara sugar in a highball glass to release the juices and oils.
- Add the simple syrup and rum; stir.
- Fill the glass with ice.
- Pour the club soda into the glass leaving a ½” of space from the rim; stir gently.
- Garnish with a strip of blood orange peel and a sprig of mint.
- Serve immediately.
