Hoda’s Green Juice

Back when Hoda was co-anchor of The TODAY Show, she would request a green juice. My friend Katie, the show’s Coordinating Culinary Producer, would whip one up for her every morning. Recently, when I was filling in, Hoda happened to be back for a few days, so I decided to surprise her with her go-to. This recipe is similar to what Katie would make, and she would often change it up depending on what was on hand in the pantry. Some mornings she may throw in some mint or celery, for example. She often used lemon, but I prefer lime, so that’s what I use. I add it to taste. You should be able to tell that lime has been added, but it shouldn’t be too forward a flavor, hence why I have a range listed for the quantity. Hoda’s Green Juice
Ingredients
- 1 large Naval orange
- 1 5-ounce clamshell baby spinach
- 1 English cucumber, peeled and cut into chunks
- 1 large Granny Smith apple, quartered
- 1 large Honeycrisp apple, quartered
- ¼ to ½ small lime, skin and pith removed
- 1 quarter-sized medallion of ginger, ¼-inch thick
Instructions
- Wash and dry all the fruit and vegetables.
- Using a vegetable peeler, remove a 1-inch strip of skin from the orange and reserve.
- Using a chef knife, remove the ends of the orange, then remove the skin and pith like you would if you were segmenting the citrus.
- Quarter the orange.
- Using a juicer, juice the reserved orange skin, orange, spinach, cucumber, both apples, lime and ginger into a quart container; stir well.
- Serve immediately or refrigerate for up to 1 day. Stir or shake before serving.
